Green Beans with Oregano & Garlic

As summer winds down we’re enjoying the last of the treasures from our garden. 

Here’s our family’s favorite way to eat green beans – even my pickiest eater LOVES these!

It couldn’t be much simpler – here’s the recipe:

Clean green beans, break them up into small pieces and boil just until tender – about 3-5 minutes. 

Add the cooked green beans to a bowl of ice water to “shock” them & stop the cooking process. Drain well & transfer to a bowl.

Chop up fresh garlic & oregano, add to the beans.  Add red wine vinegar and toss.  I add a lot of vinegar – so that about 1/3 of the beans are submerged.

Cover & refrigerate. Toss every so often. 

If you find this too sour for your taste you can add some sugar. 

Our family loves the tart flavor of this dish!
